INGREDIENTS:

1 x cup of basmati rice
1 x onion
1 x inch cinnamon stick
3-4 cloves
½ inch ginger
3-4 cloves of garlic
1 tbsp of vegetable oil
1 tbsp of butter or ghee
1 tbsp Hot Hot Boss Sauce
Chopped fresh mint
Chopped fresh coriander

METHOD:

1. Wash the rice and soak in water for 15-30 minutes.
2. Heat the oil in a pan to a medium heat and add the cinnamon and cloves and then add finely chopped onions and sauté until opaque.
3. Finely chop the ginger and garlic and add to the onions and sauté for 2-3 minutes.
4. Add the chopped mint and sauté until the raw garlic smell leaves.
5. Add the hot sauce and salt to taste.
6. Drain the rice and add to the pan and combine well with the other ingredients.
7. Add two cups of water bring to the boil and then simmer for 20 minutes on a low heat and cover.
8. After the rice is done add a knob of butter or ghee and garnish with fresh coriander.
