INGREDIENTS:

Masala
500g potatoes
2 x medium onions
½ red pepper
½ green pepper
3 tbsp Original Hot Boss Hot Sauce
½ tsp turmeric
1 tsp mustard seeds
2-3 tbsp vegetable oil
Salt to taste
Fresh coriander to garnish

Dosai
Buy a pre made dosa mix from any Asian supermarket
or corner shop OR if you feel adventurous and would like to make it from scratch, here’s how-:
2 cups of rice (or idli rice if you can get)
½ cup uradahl
Salt to taste

METHOD:

Dosa
• Soak the rice and uradahl separately for 3-4 hours or overnight
• Grind the rice to a thick batter by food processing the rice with ½ cup of water and add more if needed.
• Grind the uradhal separately to a fine smooth fluffy batter by adding ¼ cup of water and add more if needed.
• Both batters should not be too thin.
• Mix together with salt to taste and leave overnight for min. 8-12 hours.

Masala
• To make the masala, peel and chop the potatoes and bring to the boil.
• Meanwhile finely chop the onions, the red and green pepper.
• In a frying pan add the oil and add the mustard seeds once the oil is heated up and allow it to splutter.
• Then add the onion and sauté till opaque.
• Add the chopped peppers and mix and fry until softened.
• Once the potatoes boiled, break them into small pieces.
• Then add the turmeric, salt and hot sauce into the potatoes and mix well and then add to the onion / pepper mix.
• Sauté for about 5 minutes until mixed well and cooked.
• Garnish with finely chopped coriander.

Masala Dosa
• To make the dosa, take the batter and mix well so it’s in a pouring form similar to a pancake texture.
• Heat a frying pan to a medium heat with teaspoon of oil and take one ladle of batter and pour and spread in circular motion until the pan is covered with the batter.
• Then add another few teaspoons of oil and pour around the dosa whilst it’s cooking.
• Once the dosa is brown, then add a few knobs of butter on the inner part of the dosa.
• Take a couple tablespoons of the potato masala and spread it on one half of the dosa and flip the other part of the dosa over it.
• Lift the entire dosa on to your plate and enjoy with a side of Hot Boss Original Hot Sauce for more dosai dipping pleasure!
