INGREDIENTS:

For the pork chops:
2 thick-cut bone-in or boneless pork chops
1 tbsp olive oil
Salt & pepper to taste
1 tsp garlic powder
1 tsp smoked paprika
½ tsp onion powder
½ tsp chilli powder (optional for extra kick)
2 tbsp Hot Boss Original Sauce
½ cup ketchup
2 tbsp brown sugar
1 tbsp apple cider vinegar
1 tbsp molasses or honey
1 tbsp Worcestershire sauce
1 tsp smoked paprika
1 tsp garlic powder
½ tsp onion powder
½ tsp cayenne (adjust for heat)
Salt & black pepper to taste
Pinch of rosemary
A splash of liquid smoke

METHOD:

Make the sauce: In a saucepan over medium heat, combine all sauce ingredients. Stir well and simmer for 5–7 minutes until thick and glossy. Taste and adjust heat/sweetness if needed. Set aside.

2. Prep the pork chops: Pat the chops dry with paper towels. Rub them with olive oil, then season both sides with salt, pepper, garlic powder, paprika, onion powder, rosemary and chilli powder. Let them sit at room temp for 20 minutes (optional but helps even cooking).

3. Grill or pan-sear: Grill method: Preheat grill to medium-high. Grill chops 4–5 mins per side depending on thickness, until internal temp hits 145°F (63°C).

Pan method: Heat a cast iron skillet on medium-high. Sear chops 4–5 mins per side, then lower heat and cook through.

4. Sauce it up: In the final 2 minutes of cooking, brush Hot Boss Original Sauce generously on both sides. Let it caramelize slightly — that sticky glaze is key.

5. Rest & serve: Remove chops from heat and let them rest for 5 minutes. Serve with extra sauce on the side if you're feeling wild.
