INGREDIENTS:

• Lamb pieces, boneless, cut into cubes
• Salt
• Pepper
• Oil (vegetable oil or olive oil)
• Hot sauce (Hot Hot Boss or Smokey Hot Boss, depending on your preference)
• Garlic, chopped
• Fresh rosemary, chopped or whole sprigs (for garnish and flavour)

METHOD:

1. Marinating the Lamb:
o In a bowl, combine the lamb pieces with salt, pepper, chopped garlic, and a generous drizzle of oil. Mix well to coat all the lamb pieces evenly.
o Add the hot sauce according to your spice preference. If using the Hot Hot Boss or Smokey Hot Boss, adjust the amount based on how spicy you want the skewers to be. Mix everything thoroughly.

2. Skewering:
o Thread the marinated lamb pieces onto skewers. You can alternate with pieces of fresh rosemary sprigs between the meat for added flavour, or simply use rosemary as garnish later.

3. Grilling:
o Preheat your grill to medium-high heat.
o Brush the grill grates with oil to prevent sticking.
o Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, or until the lamb is cooked to your desired doneness and has nice grill marks.

4. Serve:
o Once cooked, remove the skewers from the grill and let them rest for a few minutes.
o Garnish with fresh rosemary sprigs if desired and serve hot.
